Confetti Ice Cream Sandwich Bites

One of my favorite treats as a kid was a good old fashion ice cream sandwich. I decided to make these a little more special by dressing them up a bit. With this recipe you can have enough for a small gathering. Making these is pretty easy and doesn’t require any cooking so it’s a great recipe to whip up with kids of almost any age. For my lactose intolerant friends a soy ice cream sandwich version is available at most grocery stores so that everyone can enjoy a special treat.

These would also be great for an ice cream bar at a party! Get a variety of ice cream sandwiches in different flavors and sizes along with several types of sprinkles. Confetti Ice Cream Sandwich Bites



1 box of ice cream sandwiches (I used a 12 count box of vanilla but you could use whatever flavor you wish)
1-2 small bottles multicolor confetti sprinkles (I found mine at the grocery store in the baking aisle)


1. Line a 9×13 baking sheet with wax paper or foil and unwrap all the ice cream sandwiches and cut into thirds

2. Pour the multi-color confetti sprinkles onto a plate and dip each side of the ice cream sandwich into the sprinkles. Use your fingers to sprinkle more on the sides where you might have some bare spots. Lay the completed ice cream sandwich back onto the lined baking sheet.

4. Repeat the process with all the ice cream sandwiches.

5. Place back in the freeze for 30 minutes – 1 hour to ‘set’.
